Pumpkin Bread
Makes 1 loaf
Ingredients
- 1 cup white flour
- 1 cup whole wheat flour
- 1 Tbsp + 1 tsp pumpkin pie spice
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 15 oz can pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1/2 cup plain greek yogurt
- 2 eggs
- 6 Tbsp olive oil or coconut oil
Directions
- Preheat oven to 350
- In a large bowl combine flour, pumpkin pie spice, baking soda, baking powder, and salt.
- In a medium bowl combine pumpkin puree, sugar, honey yogurt, eggs, and oil.
- Pour the wet ingredients into the dry ingredients. Fold to combine
- Spray the loaf pan with nonstick spray. Put the batter in the pan.
- Bake for 60 minutes or until a toothpick comes out with only a few crumbs attached.
- Allow it to cool for 10 minutes before removing it from the pan.
- Cool completely before storing it.
Notes:
- This freezes really well. Allow it to completely cool before placing it in a freezer-safe bag or container. To thaw remove it from the freezer and allow it to thaw on the counter without opening the bag or container.
