Pumpkin Bread

Makes 1 loaf

Ingredients

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 Tbsp + 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 15 oz can pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1/2 cup plain greek yogurt
  • 2 eggs
  • 6 Tbsp olive oil or coconut oil

Directions

  1. Preheat oven to 350
  2. In a large bowl combine flour, pumpkin pie spice, baking soda, baking powder, and salt.
  3. In a medium bowl combine pumpkin puree, sugar, honey yogurt, eggs, and oil.
  4. Pour the wet ingredients into the dry ingredients. Fold to combine
  5. Spray the loaf pan with nonstick spray. Put the batter in the pan.
  6. Bake for 60 minutes or until a toothpick comes out with only a few crumbs attached. 
  7. Allow it to cool for 10 minutes before removing it from the pan.
  8. Cool completely before storing it. 

Notes:

  • This freezes really well. Allow it to completely cool before placing it in a freezer-safe bag or container. To thaw remove it from the freezer and allow it to thaw on the counter without opening the bag or container.
