Pickles
Makes 2 quarts
Ingredients
- 7 cups cucumbers, thinly sliced (approx 6-8 small cucumbers)
- 2 Tbsp. salt
- 1 cup sweet onion, thinly sliced
- 2 cups sugar
- 1 cup apple cider vinegar
- 1 tsp. yellow mustard seed
- 1 tsp. celery seed
Directions
- Thinly slice the cucumbers
- Thinly slice the onion
- In a large bowl, toss the cucumbers, onion, and 2 Tbsp. salt.
- Let it stand for 1 hour, stirring once halfway through
- In a 2-quart jar, add the sugar, vinegar, mustard seed, celery seed, and cucumber mixture
- Refrigerate for at least 24 hours before using
- Enjoy!
