No-Bake Blueberry Citrus Cheesecake
Makes 8 mini cheesecakes
Ingredients
- 1 cup crushed graham crackers
- 1 Tbsp brown sugar
- 1/4 cup butter melted
- 8 oz cream cheese
- 3/4 Tbsp sugar
- 3/4 Tbsp Bourbon Vanilla Extract (normal vanilla extract works too)
- 1/4 cup sweetened condensed milk
- 1 Tbsp lemon juice
- Fresh blueberries
Directions
- Combine graham crackers, brown sugar, and melted butter to make a crust
- With a blender mix the cream cheese sugar and vanilla extract
- Add sweetened condensed milk and lemon juice, mix
- In small dishes pack in the crust
- Place filling on top
- Freeze for 20 minutes
- Top with fresh blueberries
