Mediterranian Farro Salad
Makes about 6 servings
Ingredients
- 3 cups cooked farro
- Mediterranean dressing
- 1 tomato
- 1 cucumber
- 1 can chickpeas
- Optional spiced chickpeas
- 2 tsp. olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/8 tsp cayenne pepper
- black pepper to taste
- salt to taste
Directions
- If you want to spice your chickpeas
- drain chickpeas
- heat olive oil in a medium pan
- add chickpeas and seasonings
- sautee for about 5 minutes or until chickpeas are slightly browned
- chop the cucumber and tomato into bite-sized pieces
- combine farro, tomato, cucumber, and chickpeas
- toss with the Mediterranean dressing
Notes:
- This recipe is good with plain or spiced chickpeas
