Mediterranian Farro Salad

Makes about 6 servings

Ingredients

  • 3 cups cooked farro
  • Mediterranean dressing
  • 1 tomato
  • 1 cucumber
  • 1 can chickpeas
  • Optional spiced chickpeas
  • 2 tsp. olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • black pepper to taste
  • salt to taste

Directions

  1. If you want to spice your chickpeas
  2. drain chickpeas
  3. heat olive oil in a medium pan
  4. add chickpeas and seasonings
  5. sautee for about 5 minutes or until chickpeas are slightly browned
  6. chop the cucumber and tomato into bite-sized pieces
  7. combine farro, tomato, cucumber, and chickpeas
  8. toss with the Mediterranean dressing

Notes: 

  • This recipe is good with plain or spiced chickpeas
