Jerk Shrimp and Mango Salsa Rice Bowls

Ingredients

  • 1.5 pounds small shrimp peeled and tails removed
  • 2 Tbsp. olive oil
  • 2 Tbsp. Jerk seasoning
  • salsa verde
  • cilantro
  • 3 cups cooked rice
  • 1 mango
  • 1 can black beans
  • 2 green onions
  • 1 avocado

Directions

  1. make rice according to package directions
  2. Preheat oven to 425
  3. On a baking sheet combine the shrimp, olive oil and jerk seasoning. Arrange in a single layer
  4. Cook for about 10 minutes
  5. Chop the mango and avocado
  6. Make bowls with a base of rice and top with mango, black beans, green onion, avocado, cilantro and shrimp
  7. Enjoy!

Jerk Seasoning

  • 1/3 cup smoked paprika
  • 1 Tbsp. ground allspice
  • 1 Tbsp. chipotle chile powder
  • 1 Tbsp. dried thyme
  • 1 tsp. garlic powder
  • 1 tsp. ground cinnamon
  • 1-2 tsp. ground cayenne pepper
  • 2 tsp. salt
  • 2 tsp. ground pepper

Combine all the ingredients. Store in a glass airtight container.
