Jerk Shrimp and Mango Salsa Rice Bowls
Ingredients
- 1.5 pounds small shrimp peeled and tails removed
- 2 Tbsp. olive oil
- 2 Tbsp. Jerk seasoning
- salsa verde
- cilantro
- 3 cups cooked rice
- 1 mango
- 1 can black beans
- 2 green onions
- 1 avocado
Directions
- make rice according to package directions
- Preheat oven to 425
- On a baking sheet combine the shrimp, olive oil and jerk seasoning. Arrange in a single layer
- Cook for about 10 minutes
- Chop the mango and avocado
- Make bowls with a base of rice and top with mango, black beans, green onion, avocado, cilantro and shrimp
- Enjoy!
Jerk Seasoning
- 1/3 cup smoked paprika
- 1 Tbsp. ground allspice
- 1 Tbsp. chipotle chile powder
- 1 Tbsp. dried thyme
- 1 tsp. garlic powder
- 1 tsp. ground cinnamon
- 1-2 tsp. ground cayenne pepper
- 2 tsp. salt
- 2 tsp. ground pepper
Combine all the ingredients. Store in a glass airtight container.
