Greek Shrimp Bowls

Makes 4 servings

Ingredients

  • 1/4 cup olive oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. chopped parsley
  • 2 cloves garlic, minced
  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • 3/4 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1 lb. shrimp
  • 2 small zucchini
  • 2 bell peppers
  • 1 cup dry white rice

Lemon garlic yogurt

  • 1/2 cup plain greek yogurt
  • 1 tsp. garlic powder
  • 1 Tbsp. lemon juice

Directions

  1. Make rice according to package directions
  2. Combine the oil, lemon juice, parsley, garlic, paprika, oregano, salt, and pepper
  3. Chop the pepper and zucchini
  4. Place the vegetables and shrimp in separate bowls
  5. season both with the marinate and stir to combine
  6. Let sit for 10 minutes
  7. Cook the rice according to package directions
  8. Heat a large, lightly oiled skillet over medium heat
  9. Add shrimp and cook for 2 minutes per side
  10. Remove shrimp from skillet and place vegetables in the skillet
  11. Cook for about 8 minutes until tender
  12. Combine the ingredients for lemon-garlic yogurt
  13. Assemble bowls and top with dressing
  14. Enjoy!
