Greek Shrimp Bowls
Makes 4 servings
Ingredients
- 1/4 cup olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. chopped parsley
- 2 cloves garlic, minced
- 1 tsp. paprika
- 1 tsp. dried oregano
- 3/4 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 lb. shrimp
- 2 small zucchini
- 2 bell peppers
- 1 cup dry white rice
Lemon garlic yogurt
- 1/2 cup plain greek yogurt
- 1 tsp. garlic powder
- 1 Tbsp. lemon juice
Directions
- Make rice according to package directions
- Combine the oil, lemon juice, parsley, garlic, paprika, oregano, salt, and pepper
- Chop the pepper and zucchini
- Place the vegetables and shrimp in separate bowls
- season both with the marinate and stir to combine
- Let sit for 10 minutes
- Cook the rice according to package directions
- Heat a large, lightly oiled skillet over medium heat
- Add shrimp and cook for 2 minutes per side
- Remove shrimp from skillet and place vegetables in the skillet
- Cook for about 8 minutes until tender
- Combine the ingredients for lemon-garlic yogurt
- Assemble bowls and top with dressing
