Granola Bars


Ingredients

  • 1.75 cups old fashioned oats
  • 1 tsp. ground cinnamon
  • 1/2 tsp salt
  • 2 cups mix ins
  • 1 cup almond butter or other nut butter
  • 1/2 cup honey or maple syrup
  • 1 tsp. vanilla extract

Directions

  1. In a large bowl, combine the oats, cinnamon, and salt
  2. Lightly chop the mix in if desired
  3. Add the mix ins into the oat mixture
  4. In a medium bowl, combine the almond butter, honey, and vanilla extract
  5. Stir the liquid ingredients into the dry ingredients
  6. Line a 9x9 square baking dish with parchment paper
  7. Pour the mixture into the pan
  8. Evenly spread out the mixture and press it down firmly. Use  a short flat bottom glass to press the mixture together
  9. Cover and refrigerate for at least 1 hour
  10. Enjoy!

Mix ins: almonds, cashews, pecans, walnuts, pepitas, shredded coconut, dried fruit, etc. 

Favorite mix in combo: 1/2 cup shredded coconut, pepitas, pecans, and cashews
