Pumpkin Pie Energy Bites

Makes about 15 bites

Ingredients

  • 1/3 cup pumpkin puree
  • 1/3 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1.5 cups rolled oats
  • 3/4 tsp pumpkin pie spice
  • or: 1/4 tsp cinnamon, nutmeg, and ginger

Directions

  1. Mix together the pumpkin puree, almond butter, honey, and vanilla extract.
  2. Add the rolled oats and spices and mix until combined
  3. Chill in the fridge for about 30 minutes (this helps them form into balls easier).
  4. Form into balls and store in the freezer

Notes:

  • These energy bites don't freeze solid. Putting them in the freezer helps them keep longer and keep their shape. They can be eaten directly from the freezer or they will thaw on the counter in just a couple minutes.
