Corn Chowder
Makes 6 quarts
Ingredients
- 1 stick of butter
- combination of vegetables- onion, leek, carrots, celery, potatoes
- 4 cans of vegetable broth (about 58oz)
- 1/3 cup of flour or cornstarch
- big bag of frozen corn
- 3 cans of cream corn
- cubed ham (optional)
- pint of half and half
Directions
- melt a stick of butter in a big pot
- sautee the vegetables- onion, leek, carrots, celery
- have 2 cans or broth ready to pour in
- put 1/3 cup of flour in the pot and stir constantly until it thickens
- pour in 2 cans of broth
- add the big bag of frozen corn, cans of cream corn, rest of the vegetable broth, ham, and potatoes
- let it simmer for about 15 minutes or until vegetables are soft
- shortly before serving add a pint of half and half
Notes:
- this recipe can be made with any combination of leek, onion, carrots, celery, potatoes, ham, or any other vegetables.
