Chocolate Zucchini Muffins
Makes 12 muffins
Ingredients
- 3/4 cup white flour
- 1/2 cup whole wheat flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. olive oil
- 1/3 cup honey
- 1 tsp vanilla
- 1 egg
- 1 cup shredded zucchini (squeeze out the extra moisture)
- 1/4 cup unsweetened applesauce
- 1/2 cup unsweetened almond milk
- 1/2 cup milk chocolate chips
Directions
- Preheat oven to 325, line a muffin tin
- Squeeze out the extra moisture from the zucchini
- In a medium bowl combine flour, cocoa powder, baking soda, and salt
- In the stand mixer combine olive oil, honey, vanilla and egg until smooth and well combined
- Add in zucchini, applesauce and almond milk and mix until combined
- Slowly add in dry ingredients and mix until just combined
- Fold in chocolate chips
- Fill muffin tins
- Bake 22-25 minutes or until a toothpick inserted into the middle comes out clean
Notes:
- Lasts 2-3 days at room temperature or in the refrigerator for 5-7 days
- This freezes really well. Allow it to completely cool before placing it in a freezer-safe bag or container.
