Carrot Cake Cookies

Ingredients

  • 1.5 cups flour (white or white and whole wheat mix)
  • 1/2 cup packed light brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1 cup shredded carrots
  • 1/2 cup milk (regular, almond, or other)
  • 1/4 cup olive oil
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat oven to 375
  2. Line a baking sheet with parchment paper
  3. In a large bowl mix together the flour, brown sugar, baking powder, salt, cinnamon, and ground ginger. Make sure there are no lumps
  4. In a small bowl mix together the shredded carrots, milk, and olive oil
  5. Pour the wet ingredients into the dry ingredients and stir until there are only a couple dry spots
  6. Fold in the nuts and raisins and stir until there aren't any dry spots
  7. Scoop spoonfuls of the dough onto the baking sheet about an inch apart
  8. Bake for 18-22 minutes or until the bottoms are golden brown
  9. Enjoy!

Apple version:

  • Substitute chopped apples for carrots
  • Substitute nutmeg for ginger
  • leave out the raisins
