Apple Muffins
Makes 12 muffins
Ingredients
- 1 cup whole wheat flour
- 3/4 cups white flour
- 1.5 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup grated apple
- 1 cup apple diced into 1/4" cubes
- 1/3 cup olive oil
- 1/2 cup honey or maple syrup*
- 2 eggs
- 1/2 cup plain greek yogurt
- 1/2 cup applesauce
- 1 tsp. vanilla extract
Directions
- Preheat oven to 325
- In a large mixing bowl combine all the dry ingredients
- Add the grated and chopped apple and stir to combine
- In a medium bowl combine the oil and honey and whisk to combine
- Add the eggs and beat well
- Add the yogurt, applesauce, and vanilla and mix well
- Pour the wet ingredients into the dry and mix just until combined
- Lightly grease the muffin tins
- Divide batter into the tins
- Bake for 23-25 minutes, or until a toothpick comes out clean
- Allow it to cool in the tin for a few minutes before removing them onto a cooling rack
Notes:
- * If you use maple syrup cook them at 425 for 13-15 minutes. The maple syrup can withstand a higher heat than honey can
- These muffins freeze really well. Just microwave for about a minute to thaw.
