Apple Muffins

Makes 12 muffins

Ingredients

  • 1 cup whole wheat flour
  • 3/4 cups white flour
  • 1.5 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup grated apple
  • 1 cup apple diced into 1/4" cubes
  • 1/3 cup olive oil
  • 1/2 cup honey or maple syrup*
  • 2 eggs
  • 1/2 cup plain greek yogurt
  • 1/2 cup applesauce
  • 1 tsp. vanilla extract

Directions

  1. Preheat oven to 325
  2. In a large mixing bowl combine all the dry ingredients
  3. Add the grated and chopped apple and stir to combine
  4. In a medium bowl combine the oil and honey and whisk to combine
  5. Add the eggs and beat well
  6. Add the yogurt, applesauce, and vanilla and mix well
  7. Pour the wet ingredients into the dry and mix just until combined
  8. Lightly grease the muffin tins
  9. Divide batter into the tins
  10. Bake for 23-25 minutes, or until a toothpick comes out clean
  11. Allow it to cool in the tin for a few minutes before removing them onto a cooling rack

Notes:

  • * If you use maple syrup cook them at 425 for 13-15 minutes. The maple syrup can withstand a higher heat than honey can
  • These muffins freeze really well. Just microwave for about a minute to thaw.
