Apple Carrot Muffins
Makes 12 muffins
Ingredients
- 2 cups almond flour
- 1.5 cups old-fashioned oats
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup chopped walnuts
- 1/2 cup honey or maple syrup
- 3 eggs
- 6 Tbsp. butter, melted
- 1 cup grated apples
- 1 cup grated carrots
Directions
- Preheat oven to 350
- In a large bowl, combine the almond flour, oats, cinnamon, baking soda, salt, and walnuts
- In a medium bowl whisk together the honey, eggs, and butter.
- Add the apples and carrots
- Pour the wet ingredients into the dry ingredients
- Mix until just combined
- Evenly fill the muffin tin
- Bake for 25-30 minutes or until a toothpick comes out clean
- Enjoy!
Notes:
- These muffins freeze really well. Just microwave for about a minute to thaw.
